Fruit and Dumplings

Y’all, my grandma Jean used to make the best dessert for cold winter evenings.  She would take whatever fruit she had and make it into a fruit with dumplings dessert.  I know, a lot of you might have only heard of dumplings being used with chicken and dumplings or a beef or chicken stew, but this is an awesomely delicious dessert.  She always served it with a dip of ice cream melting all over into the fruit and dumpling. 

Now, I made mine with strawberries and blueberries, but you could make it with whatever your favorite fruits might be, or whatever is in season in your area. Maybe plums, nectarines, or peaches, or apples and a berry or even some nuts.  So please make this your own and see what you can come up with that your family will enjoy.  Enjoy Y’all.

 

Ingredients:

  • 2 1/2 to 3 cups strawberries and blueberries
  • 3 tablespoons brown sugar
  • 1 1/2 tablespoons lime juice
  • 1 cup flour
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • pinch salt
  • 1/2 cup half & half
  • 2 tablespoons butter

Stir together your berries, sugar and lime juice in large saucepan on medium heat. Bring it to a simmer, stirring occasionally. 

Stir together the flour, baking powder, cinnamon and salt.  Heat half & half and butter until butter is melted.

Mix wet ingredients into the dry mixture until smoothly blended. Spoon out golf ball-sized dumplings of dough. Drop these into the fruit sauce with space between them.

Cover the saucepan and turn heat down to low. Cook covered and undisturbed for about 18 to 20 minutes until dumplings look dry on top. Dumplings are going to  grow in size.

Take off heat and let stand for 5 minutes before serving.  Serve with ice cream or even a little bit of heavy or whipped cream on top.
