  • 2 cups heavy cream
  • 1/2 – 3/4 cups Parmesan cheese shredded
  • salt & pepper to taste
  1. Cook pasta about 1 minute less than box says so it is al dente
  2. Sauté the chicken till browned well over medium heat with the olive oil
  3. Add in the garlic powder and diced tomatoes and cook for 2-3 minutes
  4. Add in spice mixture and stir to combine
  5. Add in spinach and let wilt down 3-4 minutes
  6. Add cream and Parmesan Cheese
  7. Let it cook 4-5 minutes to thicken
  8. Using a spider, dip the pasta from the pot into the chicken/tomato mixture and stir to combine (don’t discard pasta water)
  9. If the dish does not have enough sauce, add in a bit of the pasta water at a time to increase sauce, it will thicken as it cooks.
  10. Transfer to serving dish and top with chopped fresh basil and grated Parmesan Cheese.
