These are just an over the top decadent cookie bar. Not enough that it has pecans and coconut, but this bad boy has Dulce de Leche as well. This just makes it one irresistible cookie bar. Just be warned. This is sugar over load and you will not need but one small piece at a time. Let me know what you think about this version and y’all enjoy.
1 can/jar Dulce de Leche
1 1/4 cup flour
1/4 teaspoon salt
1 stick butter at room temperature
1/3 cup sugar
1 teaspoon vanilla
2-3 tablespoons heavy cream
1 1/2 crushed pecans
1 cup coconut
Bring together the salt and flour and set aside.
Place butter and sugar in stand mixer and mix till well creamed.
Add in the vanilla and mix well.
Now add the flour/salt mixture a bit at a time and mix well.
Press this mixture into the bottom of a prepared 9×13 baking dish.
Bake in a preheated 350°F oven for 15-18 minutes until golden brown around the edges.
While this is baking, heat the Dulce de Leche over medium low heat.
Add in heavy cream to thin it out some.
Now add in the pecans and the coconut and mix well.
Once cookie base has cooled, spread the coconut pecan mixture over the top evenly.
Sprinkle with a bit of salt if you like
Put back in oven 12-14 minutes until it is lightly toasted and bubbly around the edges.
