Broccoli Soufflé

Y’all, today I decided to make a whole bunch of different things for Thanksgiving.  Had to test out recipes for my food blog.  I have never tried this before.  A friend shared it with me at work and I decided to add a few things.  I have to admit it did turn out great.  Also, as you can see, it did not deflate at all.  The soufflé Gods were with me today.  Give it a try, it is delicious.

 

Ingredients:

  • about 1 pound of broccoli, cooked, chopped and drained well
  • 2 tablespoons butter
  • 1 small shallot finely diced
  • 1 clove garlic finely diced and crushed
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/2 cup half and half
  • 1 1/2 cup sharp cheddar cheese
  • 4 eggs

 

Preheat oven to 350 F. Grease casserole dish.

In large sauté pan, melt butter and add shallot to sweat.  Add garlic and cook for about 1 minute.  Do not burn garlic.  Add flour and and stir till well blended and cook for about 2 minutes.   Add half and half and simmer until it thickens.  Add cheese.  In small bowl beat eggs well.  Add about 1/4 of hot mixture into eggs to temper.  Then add egg mixture into cheese mixture.

Place broccoli into saute pan.  Pour cheese/egg mixture over broccoli.

Bake for 30-40 minutes, or until knife inserted comes out clean.
