Mel Tillis helps create a specialty dish served up every day at the Country Music Hall of Fame.
Ingredients
3-4 medium green tomatoes, cleaned and sliced into ½-inch-thick rounds
- 1 cup mayonnaise
- 1 tsp. roughly chopped fresh parsley
- 1 tsp. roughly chopped fresh thyme
- 1 tsp. minced green onion
- All-purpose flour
- 1-2 cups buttermilk
- Cornmeal
- 8 slices whole wheat (or any style) bread
- 4-8 slices mozzarella cheese
- Leaf lettuce
- 12 slices of “cooked-to-taste” applewood-smoked bacon
Preparation
Combine mayonnaise, parsley, thyme and onion in blender and set aside.
- Lightly salt and pepper sliced green tomatoes to taste.
- Dredge tomatoes in flour (both sides), then dip in buttermilk.
- Coat tomatoes with cornmeal.
- Fry tomatoes in canola oil at 350° until golden brown.
- Depending on preference, toast the whole wheat slices prior to sandwich assembly or butter and pan-fry both sides of assembled sandwich afterwards.
- Spread herbed mayonnaise to taste on inside slices of bread.
- Layer 1-2 slices of mozzarella, leaf lettuce, bacon and fried green tomato.
