Red Velvet Peppermint Christmas Crinkles

I got to spend this past weekend with two of my granddaughters.  Of course they wanted to make cookies so that’s just what we did.  First we made Grinch-Mas Cookies.  Then as if that wasn’t enough, Chloie wanted to make another kind.  So we made these beautiful and very holiday tasting Red Velvet Peppermint Christmas Cookies.   They are so easy to make.  Using a box cake mix and just a few other ingredients, they are very kid friendly.  And as y’all know, I love cooking with my grandkids.  I just wish my other two granddaughters and 2 grandsons lived closer so I could do the same with them.

So why don’t y’all get into the kitchen during this Christmas season and make memories with your little ones.  I guarantee you wont’ regret it.  So, now on to Chloie showing you how she made the cookies.

 

Ingredients

  • 1 Red velvet cake mix (white will work , you’ll just need to add cocoa and red food coloring)
  • 2 eggs
  • 1 teaspoons vanilla extract
  • 8 tablespoons butter (1 stick) melted
  • red food coloring if you use a white cake mix (about 50 drops, depending on how red you want them)
  • 2 tablespoons unsweetened cocoa if you use a white cake mix
  • 1 cup powdered sugar
  • 1 teaspoon corn starch
  • 8 candy canes

Directions:

Mix together the cake mix, eggs, vanilla, butter, (if needed the food coloring and cocoa).

Scrape down the bowl so you make sure mixture is well combined.

Place the candy canes in a food processor to crush.  You may want to break them up as much as possible first so they don’t jam up the blades.

Add about 3/4 of the crushed candy canes to the mixture and combine well.

Mix the powdered sugar and corn starch in small bowl.

Using a small scoop or tablespoon make walnut sized balls of cookie dough and then roll in the powdered sugar mixture to coat.

Place on cookie sheet about 2 inches apart and sprinkle with a bit of the remaining crushed candy canes.

Bake at 350 degrees for 9-10 minutes.  Remove from oven and let sit on cookie sheet for 1 minute, then place on cookie rack to cool.
