Susan Greenes’ Apple Cinnamon Oatmeal Casserole

Hey Everyone, this is a breakfast casserole that is very similar to one my great grandmother made, that I have yet to find the recipe for in our family.  But after seeing Susan Greene  make this on an episode of Paula Deens “Best Dishes”, I had to try it.  I felt like I was 8 years old again and sitting in my great grandma’s kitchen eating it.  If this isn’t the same, it is so close it is ridiculous.  I will be making this all the time now that I found a recipe that is just as good as grandma’s.

So here is her recipe for Apple Cinnamon Oatmeal Casserole

 

Ingredients

  • 2 cups half-and-half or milk
  • 1/4 cup packed brown sugar
  • 1 tablespoon butter
  • 1/2 teaspoon salt
  • 1 cup quick-cooking oats
  • 2 tablespoons ground cinnamon
  • 1 cup peeled chopped apple
  • 1/2 cup chopped dried apricots
  • 1/4 cup chopped pecans
  • 1/2 cup raisins
  • 2 tablespoons dried cherries
  • Cinnamon Oat Nut Topping, recipe follows

Directions

Preheat the oven to 350 degrees F. Grease a medium casserole dish.

Combine the half-and-half or milk, brown sugar, butter and salt in a heavy saucepan over medium heat. Simmer until the butter is melted and the mixture is smooth. Remove from heat. Add the oats to a casserole dish and stir in the milk mixture, cinnamon, apples, apricots, pecans, raisins and cherries. Cook’s Note: If the casserole seems dry, add milk to moisten.

Top with Cinnamon Oat Nut Topping and dot with butter. Bake for 20 to 30 minutes. Remove from the oven and serve.

 

Cinnamon Oat Nut Topping:

  • 1/4 cup packed brown sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons chopped pecans
  • 3 tablespoons oats

  4. I saw that show. It was a long time ago. Weren’t they roller skating or something in Paula’s kitchen? I wish we could see Paula back on the screen soon.

  5. I made this in the crock pot. It turned out great. BTW, why weren’t you ever on one of Paula’s shows, or where you and I missed it?

  6. I definatley have to try this one out Greg. Could I make in small ramekins and bake in a toaster oven for individual servings? Just me here and I couldn’t eat whole thing all at once…well maybe I could. It sounds really good.

    • Seth, I am sure you could. I might just have to test that out and let you know. Just another great reason to make it again this weekend huh?

    “Seth” I did make it the way you said in little dishes and actually froze them. then I took them out of the ramikins and put them in plastic zip top bag in freezer till I needed them. worked great.

    Great recipe Greg/Susan. Greg, when is the cookbook coming out? Will you be doing it in a digital version too so we can download it to our Kindles? Can’t wait.

    • I’ll be posting information on when very soon Carolyn. The digital version is a great idea. I will definitely look into that. Trina (my partner in the book) mentioned that on occasion too.
