Pineapple Ginger Chicken Thighs

Here’s a great quick and easy weeknight meal.  It takes only minutes to put together, but the taste is so rewarding.  I served it with some toasted garlic bread and parsley buttered potatoes.  I think once y’all try this one it will earn a place in your recipe box.

 

Ingredients:

  • 2 tablespoons olive oil
  • 4 skinless boneless chicken breasts
  • 1  8 ounce can crushed pineapple
  • 1/2 cup brown sugar
  • 1 teaspoon ground ginger
  • 2 cups chicken stock
  • salt and pepper to taste

Directions:

Add the olive oil to large skillet and sauté the chicken over medium high  till browned well on both sides.  Lower the heat and add the pineapple, brown sugar, ginger and chicken stock.

Simmer to reduce chicken stock to a syrupy consistency.  You may need to add additional stock or water if it thickens to quickly and not ready to serve.
