Ingredients:
- 2 pounds Baby Red Potatoes
- 1 Tablespoon Salt
- 1/2 cup Butter
- 2 tablespoons bacon fat
- 1/3 cup water
- 1/4 cups Chopped Fresh Parsley
Scrub potatoes clean under running water. Leave the skins on and peel a strip of skin off all the way around the potato.
Melt the butter and bacon fat in small sauté pan.
Add the potatoes to the sauté pan and sprinkle with the salt.
Add the water and bring to a boil and cook covered until fork tender (approximately 20 minutes). Shake the pan around a bit to turn potatoes half way through. Don’t remove the lid, it will take longer to build the heat back up to finish cooking the potatoes.
Serve immediately, drizzle the melted butter/bacon fat from the pan over the potatoes.
