Peanut Butter Pumpkin Cookies

These are my Peanut Butter Pumpkin Cookies. You may not think the flavors would compliment each other to much, but they really do. It might just become your favorite fall and holiday cookie. Let me know what you think about this version and y’all enjoy.

 

Ingredients:

1 stick room temperature butter
1 egg
3/4 cup brown sugar
1/2 cup white sugar
2 cups AP flour
1/4 teaspoon salt
1/4 teaspoon baking powder
3/4 teaspoon baking soda
1 cup pumpkin puree (not pie filling)
3/4 cup peanut butter
1 tablespoon vanilla
1 tablespoon pumpkin pie spice

Add the butter, egg and sugars to your bowl and cream together.
Mix together the flour, salt, baking soda and powder.
Add the pumpkin and peanut butter, vanilla and spice mixture to the butter/sugar mixture and incorporate.
Slowly add the flour mixture in 2 or 3 equal parts on low speed.
Use a prepared cookie sheet and dip the cookies out with a cookie scoop.
Bake in a 350°F oven for 12-14 minutes…check at 10 minutes
