Instant Pot®- 15 Bean Soup

I love making this 15 bean soup mix, but I don’t always have the time to soak the beans and let them cook all day.  Using my Instant Pot® I can have dinner on the table in less than 90 minutes.  It is so quick and easy and there is no soaking of the beans.  Y’all are going to love this version of my 15 bean soup.  Let me know what you think.

 

Ingredients:

  • 2 teaspoons olive oil
  • 1 bag of 15 bean soup mix – minus the flavor packet
  • 1 sweet onion diced
  • 8 cups chicken stock
  • 5-7 sausages cut into bite size pieces
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • pinch of red pepper flakes
  • 1 teaspoon oregano
  • 3-4 cloves minced garlic
  • 1 can green diced chilis
  • 1 14 1/2 can diced tomatoes including liquid
  1. Make sure you have your liner in your Instant Pot® and set it on Sauté
  2. Sauté the onions and sausage in the olive oil till sausage is browned
  3. Add  the seasonings and cook for 2-3 minutes to allow spices to bloom
  4. Add the diced chili’s and diced tomatoes to the pot and stir well to combine
  5. Now pour in the chicken stock and mix.
  6. Pour your sorted and rinsed beans into the pot and stir.
  7. Set Instant Pot® on normal pressure cook and lock lid in place on cooker.
  8. Set timer for 60 minutes and press start.
  9. Let natural pressure release for 15 minutes once done, then you can let out remaining pressure.
  10. Let cool a couple minutes and then enjoy.
