Banana Nut Bread

My best friend Allen always makes the best banana nut bread.  I finally got him to share his recipe with me.  He emailed me and said:

“You must destroy recipe after you are done…. NO ONE IS ALLOWED TO COPY MY WORLD FAMOUS RECIPE..”

So I am not going to tell anyone…LOL   Honestly, his recipe is very moist and one of the best I’ve tasted.  I hope you enjoy.

  • 3/4  Cup Butter
  • 1 1/2   Cups Sugar
  • 1 1/2  Cups Mashed Banana’s
  • 2  Eggs
  • 1  Teaspoon Vanilla Extract
  • 2 Cups all-purpose flour
  • 1  teaspoon  baking soda
  • 3/4  teaspoon   salt
  • 1/2   cup butter milk
  • 3/4  cup nuts chopped  (walnuts are best)

Cream together butter and sugar, add banana, egg, and vanilla.  Sift together dry ingredients. Add alternately with buttermilk.  Blend well. Stir in nuts and pour into a greased and floured loaf pan. Bake at 325 degrees for 1-1/4 hours… watch closely after 1 hour till golden brown on top and passes the toothpick test.

It’s important that you mix the wet ingredients portion into the dry ingredients for some reason, add a little wet stir then a little buttermilk stir then back to the wet and back and forth add the nuts last… and to make it a little moister add a little veg oil in it just before you bake and depending on pan size it may only take 1 hour to bake not the full 1hr 15min..
