Pimento Cheese Spread

Growing up,  mom used to make pimento cheese sandwiches for lunch for us all the time.   My friends were clueless as to what they were.  Growing up in Ohio with a southern mother, aunts, cousins and grandmother, I ate all the good southern recipes that they grew up with.  Most of my friends only knew pimento’s as those red things in olives (btw, those are red peppers).  Well this is one quick southern recipe that is delicious.  Of course most of the time this spread is used on white bread with the crusts cut off.  Then cut in triangles and served at lady’s get togethers’ in the south along with a big ole pitcher of sweet tea.  But y’all should also give it a try on hamburgers (try this version with fried green tomatoes ), toasted bread rounds or even just crackers.  It doesn’t matter where you live, you should try this.  It’s a quick delicious spread that y’all are just gonna love.

 


Ingredients

    • 1 cup Mayonnaise
    • 1 teaspoon lemon juice ( I also grate some lemon zest in as well)
    • 1/2 block cream cheese (4 ounces)
  • 2 cups grated pepper-jack cheese
  • 2 cups grated sharp cheddar cheese
  • 1 (4-ounce) jar pimentos, drained and chopped small
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon Worcestershire sauce
  • Salt and freshly ground black pepper
  • 1/4 teaspoon of garlic powder
  • pinch of red pepper flakes (I like it spicy, but you can leave out)
  • 1/4 teaspoon hot pepper sauce(again, I like it spicy, but you can leave out)

This is the easiest thing to put together, just combine all the ingredients in a large bowl and mix well with a wooden spoon.  Then spread on your bread or crackers and enjoy.
