Pineapple & Shrimp Rice

This is my moms Hawaiian inspired Pineapple and Shrimp Rice recipe.  The flavors truly compliment each other so well.  I think this will be come a family favorite of yours.  Give it a try and let us know what you think.

 

Ingredients:

  • 2 cups chicken broth
  • 1 cup uncooked long grain rice
  • 1 garlic clove minced
  • 1 medium onion chopped
  • 1 green pepper, julienned
  • 2 tablespoons vegetable oil
  • 2 teaspoons soy sauce
  • 1/4 tablespoon ground ginger
  • 1 1/2 lbs cooked medium shrimp – peeled
  • 1/2 cups cubed fully cooked ham
  • 1 can pineapple tidbits – drained
  1. In a large saucepan bring the broth to a boil.  Stir in the rice and reduce heat to a low boil and cover.  simmer for 25 minutes or until tender
  2. In a large skillet sauté the onion and green pepper till tender.  Then add garlic and sauté another minute.
  3. Stir in the soy sauce and ginger, mix to combine.
  4. Add shrimp, ham and pineapple then stir in the rice.  Mix to combine
  5. Transfer to a greased 2 quart baking dish and bake at 350° F for 15-20 minutes uncovered. or until heated through.
  6. Stir before serving.
