Mango-Peach Salsa

This such a great salsa for over chicken and fish.  The sweet and spicy taste is great against a spicy meat.  Let me know what y’all think.

Ingredients:

  • 2 peaches, fresh
  • 1 mango
  • 1 bell pepper, red, medium
  • 2 tablespoons cilantro, fresh
  • 1  medium shallot (diced) onion is ok
  • 2 slices jalapenos, sliced (remove seeds and white pith if you like it less spicy)
  • 4 teaspoons apple cider vinegar
  • 2 teaspoons lime juice
  • 1 tablespoon honey
  • 1/8 teaspoon black pepper
  • 2 teaspoons olive oil, extra virgin

Peel and dice the peaches and mango into small chunks.  Place in medium bowl.  Dice the pepper, shallot and jalapenos and add to mango/peach mixture.  Chop cilantro and add to mixture.  Pour the vinegar, lime juice, honey, pepper and olive oil over mixture.  Mix well and refrigerate for at least an hour before using.  This will allow the flavors to meld well together.
