Thanksgiving Leftover Stuffing Breakfast Muffins

If y’all have stuffing and turkey left over from Thanksgiving, this is one of the sure fired best ways to use some of it up for a great breakfast. I used the airfryer for this batch, but they can be done in a regular oven as well. They are simple to make and you can pop left over ones in the freezer and heat up quickly in the microwave.

You can add additional things if you like, for example I added chile peppers, but you could use onions or green peppers and also any seasonings that you may like to try. Make them your own and use up those Thanksgiving leftovers.

 

Ingredients:
3 cups leftover dressing
1 cup leftover turkey chopped up
1 small can of roasted chili peppers
pinch of red pepper flakes
6 eggs
1 teaspoon garlic powder
1/2 cup cheese

Break up the dressing in a large bowl. Add the turkey chili peppers and pepper flakes. Combine well and divide between 12 muffin tins.

Mix the eggs with the garlic powder and pour over the dressing mixture to just below the top of the muffin cup. Divide and sprinkle the cheese over them.

Bake in 350°F oven for 35-45 minutes. Keep checking on them as every oven is different.

Pop out of muffin tins and enjoy. You can also drizzle with a bit of leftover turkey gravy if you like.
