Cowboy Casserole

There are so many different versions of this casserole as there probably are cowboys. In fact, I change mine up almost every time I make it. How do y’all make yours? Leave me a comment below and tell me. Let me know what you think about this version and y’all enjoy.

 

Ingredients:

1 lb of ground beef
Purple onion – diced
Green or red pepper – diced
Worcestershire sauce – a few large splashes
Parsley – roughly 3 tbsp, divided
One can of tomato soup – 10 3/4 ozs
One can of corn – 15.25 ozs
One can of kidney beans 15 oz.
One 4 ounce can roasted chilis
Dried ground mustard – 1 tsp
Garlic Powder – 1 tsp
Onion Powder – 1 tsp
Chili Powder – 1 tsp
Paprika – 1 tsp
Red Pepper Flakes (optional)
One package of tater tots – 32 ozs
Salt and Pepper to taste
Cheddar Cheese 2 cups
Mozzarella cheese – roughly 1 cups

Directions
1. Brown ground beef with spices – drain. Add can of soup and can of corn and beans, simmer for about 10 minutes.
2. add in all remaining ingredients excepts cheese and tater tots. Mix well and taste for S/P.
3. In a greased 9×13 baking dish, arrange tater tots in single layer. Cover with 2 cups of cheese. Pour ground beef mixture over top and cover with remaining cheese and 1 tbsp of parsley.
4. Place in a 350F oven for 30 minutes. Let stand for 5 minutes before serving.
