Snicker Doodle Applesauce Cookies

I was going through my pantry this morning and realized I have quite a few quarts of applesauce that mom and I put up this past year.  So I pulled out a couple quarts to use today.  First I made some applesauce snicker doodles.  They were so moist and with just a hint of apple.  Which went great with the cinnamon and sugar on the outside of the cookie.  I definitely think these will be on my baking list more often.

 

Ingredients

  • 1 stick butter
  • 1/2 cup applesauce
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cups white sugar
  • 2 1/2 cups flour
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 1/4 tsp salt

Cinnamon Sugar mixture

  • 6 tablespoons sugar
  • 1 tablespoon cinnamon

Directions

1. Preheat oven to 350 F degrees.
2. Cream butter and sugar together.
3. Add apple sauce, eggs and beat just until mixed. Add vanilla.
4. Mix together in separate bowl the flour, cream of tartar, soda, and salt and mix well then add to sugar applesauce mixture and mix well.
5. Put cinnamon sugar in small bowl.
6. Shape dough into 1 inch balls and roll in cinnamon and sugar.
7. Place on greased cookie sheets and bake for 7-8 minutes.
8. Let cool on cookie sheets for 2-4 minutes before removing to wire racks.
9. Store covered in a plastic bag or container.
