Good old Fashioned Sunday Dinner / Chicken & Dumplings

So this is the kind of dinner I grew up on that  my mom and Grandma would have made on a normal Sunday…

Moms Chicken and Dumplings, Mashed Potatos (retain 1/2 c of chicken stock for mashed potato’s, great for flavor), Slow Cooked Green Beans with bacon, Fresh sweet corn, Buttermilk cornbread, and homemade Apple pie.

 

 

Below is the step by step for the Chicken & Dumplings.

For Moms Chicken and Dumplings,

First I started a large cast iron dutch oven cooking a chicken to put in the dumplings and utilize the chicken stock to boil them in.

While that’s cooking, I start the dumplings…

Mix together

  • 2  cups flour
  • 3 egg yolks
  • 2 T of house seasoning (basic combination of salt, pepper, garlic powder and onion powder)
  • and about 1/4 c  ice water a bit at a time.  (just enough to bring together)

After mixed roll  out about 1/4 inch thick

Then with a sharp knife or pizza cutter, cut into pieces about 2×2 inches, or whatever size you like  your dumplings. You can place in container as in second picture with wax paper and seal and freeze for up to 3 months for later use.

Other wise, just drop them into the seasoned chicken stock that is at a rapid boil, putting them in just a couple at a time so they don’t become a big clump of dough.

I like to use a big old fashioned stock pot .

Ok, just finished eating, and I am stuffed….haven’t even cut the pie yet, it will have to wait till part way through the race, nice treat with ice cream during the NASCAR race.
