Hasselback Potatoes

This is an amazingly simple way to change up your side dish tonight.

6large potatoes
4 tbsp butter, cut into thin slices
2 tbsp olive oil
3-4 cloves of garlic, thinly sliced
salt

Preheat the oven to 425F

  1. Wash potatoes and leave on the skin.
  2. Lay potatoes on their flattest side.
  3. Cut across the potatoes making small slices and making sure that you don’t cut all the way through, but leave 1/3rd of an inch of the potato at the bottom.
  4. Position all the potatoes on a baking sheet and insert the  garlic in between the layers of potatoes, and push the slices of butter in at equal intervals.
  5. Sprinkle with salt and then drizzle the olive oil over it and put it in the oven for 60 minutes.
  6. While baking, you will want to baste the top of the potatoes with the olive oil from the pan (this will make the outside skins extra crispy).

  1. These potatoes sound and look like heaven on earth! I think I would crush some garlic and add to the olive oil, too. A sprinkle of Parmasan cheese near the end and you’ve achieved Nirvana! Way easier than fries…
