Ingredients:

2 cups whole milk
3 whole cloves
1 teaspoon cinnamon
1/2 teaspoon nutmeg
18-20 quail eggs (6 chicken egg yolks)
1 cup sugar
2 cup heavy cream
1 teaspoon vanilla
1 1/4 cup spiced rum or bourbon.

Heat the milk, cloves, cinnamon and nutmeg over medium heat in a heavy bottom pan to boiling.
Remove from heat to cool.
In large bowl mix the eggs and sugar until creamy.
Slowly ladle a bit of the heated milk to the egg/sugar mixture to temper the eggs.
Add remaining milk into the eggs, mix well and return to the pan to heat till just simmering.
Remove from heat to cool to room temperature.
Add in the heavy cream, vanilla and liquor if using.
Mix well and chill a few hours to over night and then serve.
