Christmas Pizzelles

Christmas Pizzelles Cookies Pizzelles are an Italian cookie that is crisp and light. Normally flavored with Anise, I decided to change mine up and use almond flavoring. I also added sprinkles at the end to give them a bit of Christmas flare. All I know is that these cookies go quicker than I make them around here. Let me know what you think about this version and y’all enjoy.

 

Ingredients:

  • 3 large eggs
  • 3/4 cup sugar
  • 2 teaspoons vanilla (I used almond)
  • 1 stick butter, melted and cooled
  • 1 3/4 cups all purpose flour
  • 2 teaspoons baking soda
  • powdered sugar to dust cookies
  1. Melt butter and set aside to cool.
  2. Beat the eggs and sugar in a medium sized bowl until light yellow.
  3. Add melted butter and vanilla or flavoring of your choice and mix until blended.
  4. Stir together the flour and baking powder and combine slowly with wet ingredients.
  5. Add in sprinkles and fold this together until just incorporated, don’t over stir.
  6. When your pizzelle iron is heated, place about 2 tablespoons of batter in center of each pattern.
  7. Slowly close lid and bake for 1 1/2 to 2 minutes until just golden brown
  8. Remove to a cookie cooling rack, repeat with remaining batter.  (Dust with powdered sugar if you like)
  9. Cookies will harden within a minute or two.
  10. Store in an airtight container for up to 2 weeks.
