Moms Cranberry Pineapple Salad

Y’all, this is one of my favorite side dishes at Thanksgiving.  It is my moms cranberry salad.  It is a great alternative to that canned cranberry sauce that you cut and serve.  She likes to add some additional flavors and textures to hers that I think just knock it over the top.  So give this a try and let me know what you think.

 

Ingredients:

  • 1 pound fresh cranberries chopped
  • 1 cup water
  • 2 cups sugar
  • 1  20 ounce can crushed pineapple, reserve juice
  • 1 cup chopped nuts
  • 1 pkg instant Jello® (orange, strawberry or cherry)
  • 1 large apple chopped in 1/4 -1/2 inch pieces
  • Juice of one orange
  1. In a small sauce pan, boil the chopped cranberries in the cup of water for 10 minutes.
  2. Remove cranberries from the liquid to a small bowl and mix with 2 cups sugar and let dissolve and let sit for about 2 hours
  3. To the cranberry juice in the pan, add the orange juice and pineapple juice.  Bring to a boil and then add your Jello® mix and dissolve.
  4. Once dissolved, remove from heat and set aside.
  5. In a large bowl, add the cranberry/sugar mixture along with the crushed pineapple and chopped nuts.  Stir to combine.
  6. Add the hot juices and Jello® to the bowl and stir to combine.
  7. Pour into a serving bowl and chill in refrigerator for till the it sets up.
