I had a special request to do a casserole with sauerkraut. This is one of my favorite ways of doing it. I love the flavor that the small bit of mustard and BBQ sauce impart. Let me know what you think about this version and y’all enjoy.
Ingredients:
1 quart sauerkraut – don’t drain liquid
2 large potatoes – peeled, diced, boiled
1 medium onion cut in half moons
1 15-ounce can petite diced tomatoes-drained
1 ring of smoked sausage (or your favorite)
1/2 cup sugar
1/2 cup brown sugar
2 tablespoons Dijon mustard
2 tablespoons BBQ sauce
1/2 teaspoon ginger
Drain the sauerkraut and add to large bowl.
Add in your cooked potatoes and cut onions and mix well
Add in remaining ingredients and stir to combine.
Pour into a prepared 2.5 – 3 quart baking dish.
Smooth out mixture in the dish.
Bake in a preheated 350°F oven for 1 hour.
