Pulled Pork Pasta Casserole

We always struggle with what to do with all the left over pulled pork when we do a shoulder or butt. So this is one of my favorite ways to use up the left overs. It’s my Easy Pulled Pork Pasta Casserole that is as tasty as it looks. Let me know what you think about this version and y’all enjoy.


Ingredients:
3-4 cups pulled pork
1 box of pasta cooked al dente
1/2 block of cream cheese at room temperature
1 can fire roasted green chilis
2 green onions diced, top and whites
2 cups shredded cheddar
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon oregano
1 full can of fire roasted diced tomatoes including juice
2/3 – 3/4 cup favorite BBQ sauce
salt and pepper to taste

Cook your pasta to al dente
in large bowl combine the cream cheese, chilis, onions, 1/2 of the cheese and spices. Mix well to combine.
Add in the tomatoes and BBQ sauce and mix well
Now you can add the pulled pork and pasta and mix to combine.
Pour in a prepared 9×13 baking dish and sprinkle top with rest of the cheese.
Now bake at 350° preheated oven for 30-35 minutes
