Ohio’s (my home state) most abundant fall crop is Apples, with orchards stretching across the northern and central part of the state. Ohio’s apple culture owes it’s beginnings to Johnny Appleseed, ne John Chapman, an eccentric and colorful itinerant farmer who introduced apple trees to Ohio. Since Grandma Jean had her own personal apple tree, and most of her sons worked for the “Pangle” family who had apple orchards, this was one of her go to cake recipes. It is wonderful and so very easy to make.
Ingredients:
- 3 eggs
- 1 3/4 cup sugar
- 1 cup oil
- 2 cups all-purpose flour
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 1 cup coarsely chopped walnuts
- 4-6 tart apples, sliced or cut in chunks
Preparation:
Mix the eggs, sugar, and oil together. Sift the flour, baking sodea, cinnamon, and salt into the egg mixture. Mix well and add the walnuts and apples. Bake in an ungreased cake pan for 45 minutes to 1 hour in a 350 degree oven.
