Southern Banana Pudding

Y’all, I think the one dessert that I have seen at every family gathering, whether a holiday, a death, a birth, a wedding or birthday is banana pudding.  I actually got very upset with Michaels family this past Easter when we showed up and nobody had made pudding.  That just ain’t right in my book.

This is one of the easiest and most delicious things you can make.  In my picture above you can see there is no whipped cream.  I usually wait till just before serving it to make a fresh batch of home made whipped cream.  This baby is going in the old chill chest for the night, for Thanksgiving dinner.

I hope y’all enjoy this as much as I did licking the beater from my Kitchen Aid stand mixer.  It was yummy.

 

 

INGREDIENTS:

  • 2  Tbsp. Flour
  • 1/2 cup sugar
  • 1 cup milk
  • 1 cup heavy cream
  • 2 eggs
  • butter
  • vanilla
  • Vanilla Wafers
  • Bananas

DIRECTIONS:

In a saucepan, mix flour & sugar then add eggs and mix well.  Start your milk on lowest setting and increase to medium a  bit at a time stirring constantly.  Continue stirring until it has thickened.  Do NOT leave your pudding, it will burn if you are not constantly stirring it.  After it thickens nicely, add butter and vanilla to taste.  About 1 Tbsp of butter. Not too much vanilla  or it will taste almost chocolaty,  1/2 teaspoon tops.  Taste it and add more if you like.

Cut your bananas in 1/4 to 1/2 inch slices just before you’re ready to layer the pudding or they will turn brown.

I layer the vanilla wafers first, then a layer of pudding, a layer of bananas and then back to the wafers (over and over) till I fill the dish.  I always finish top with wafers. Don’t forget to top it before serving with home made whipped cream.
