Apple Pecan Cobbler

Growing up in Ohio, apples played a big part of my life.  There were apple orchards all over the area of Ohio where I grew up.  Of course my grandma Jean had an apple tree on their farm too.  So I was always being treated to all sorts of apple desserts.  To this day when I smell apples and cinnamon coming from the kitchen I am transported back to my childhood.

So this is my very simple version of my moms apple cobbler.  It was hard to wait for it to come out of the oven.  I was literally looking through the oven window the last few minutes just watching it brown on top.  It’s best to put a big ole dollop of vanilla ice cream on top of it hot from the oven and give it a couple minutes if you can to let the ice cream begin to melt.   The soft sweet cakes starts absorbing the melted ice cream and is like heaven on a spoon.

 

ingredients:

  • 8 tablespoons butter
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 cup sugar + 1/4 cup
  • 1 cup milk
  • 6 large granny smith apples –peeled/sliced thin
  • 2 tablespoons cinnamon
  • 1/2 cup crushed pecans
  1. In  a large bowl combine the apples,  1/4 cup sugar, cinnamon and pecans.  Toss to mix will.
  2. Place the butter in a 8×11 baking dish and place in oven. Turn oven on to 375 degrees and let butter melt while oven comes to temperature
  3. In another bowl combine the flour, baking powder,  1 cup sugar and milk.  Mix well.
  4. Remove baking dish from oven once butter is melted and oven is to temperature.
  5. Pour the flour milk mixture into and over the butter in baking dish.
  6. Evenly distribute the apple mixture over the top of the flour milk mixture evenly.
  7. Bake for 20-25 minutes or until evenly browned and apple mixture is bubbling up through the cobbler.
  8. Top with ice cream and serve.
