This is another of my mom and grandma Jeans holiday treats. We had fruit a lot all year long. Heck my family had apple trees, cherry trees, pear trees and even a peach tree here or there. But to have all the things in this dish was a treat. The coconut, bananas and oranges were a treat along with the pecans. I think Christmas was my favorite time of the year, not only for the gifts under the tree, but also for the food that mom, and my grandma’s all made. Its such a shame these days to see people pick up their holiday meals and treats pre made at the supermarket. What a terrible shame.
Grandma Jean always had this on her holiday table. I was never a great fan as a child, but as an adult, it is one of my favorites. I just think of it as being healthy. Hey, it has “Salad” in the title doesn’t it? And isn’t salad good for you? Its like having dessert while your still eating your dinner. What can be better than that? Well, if somehow we could incorporate chocolate into it.
Ingredients:
- 1- 20 ounce can pineapple chunks in juice
- 1 – 11 ounce can mandarin orange segments in syrup
- 2- firm large banana
- 1 1/2 cups seedless grapes
- 1- cup miniature marshmallows (colored ones are fun)
- 1/2 cup chopped pecans or walnuts
- 1- cup dairy sour cream or plain yogurt
- 1-tablespoon brown sugar
- 1/4 teaspoon salt
Drain pineapple and orange segments.
In a large bowl, combine pineapple, mandarin oranges, banana, grapes, marshmallows and nuts.
In a 1-quart bowl measure, combine sour cream, ( or yogurt) and brown sugar. Stir gently into fruit mixture.
Refrigerate, covered for 1 hour or overnight. The longer you let it sit the better it gets!
