Old-Fashioned Soft Pumpkin Cookies

 pumpkincookies3Y’all, here is one of the tastiest cookies for this time of the year.  I love the softness of the cookie.  If y’all like, you could make a powder sugar glaze for them to drizzle or ice.  I prefer mine plain, but y’all decide.

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/8 teaspoon ginger
  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1/2 cup butter, softened
  • 1 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract

Directions:

  1. Preheat oven to 350 degrees F. Grease baking sheets.
  2. Combine flour, baking soda, baking powder, cinnamon, nutmeg, ginger and salt in a medium bowl.
  3. Beat sugar and butter in a large mixer bowl until well blended. Beat in pumpkin, egg and vanilla extract until smooth. Gradually beat in flour mixture.
  4. Drop by rounded teaspoon onto prepared baking sheets.
  5. Bake for 15 to 18 minutes of until edges are firm. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
