Deluxe Ground Beef and Potato Casserole

Mom got this recipe out of an old Amish cookbook that was designed to feed a crowd. She made the double batch but I have put the ingredients down below for a single casserole. This is one tasty and easy to throw together casserole that will fill up your family. Let me know what you think about this version and y’all enjoy.

 

Ingredients: (For a single casserole, not double like mom did.)

  • 1 1/2 lbs. ground beef
  • 1 diced medium onion
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 box elbow macaroni – cooked
  • 4 cups diced potatoes
  • 1 can of sweet peas (or pint if home canned)
  • 1 can cream of mushroom soup
  • 1/2 cup tomato sauce
  • 1/2 lb. Velveeta® Cheese sliced or shredded
  1. Brown ground beef and drain excess fat.
  2. In a large bowl combine all remaining ingredients.
  3. Add in the ground beef and mix to combine
  4. Pour into a 9×13 baking dish and cook covered for 30 minute’s at 350°F
