Mexican Chicken Bubble Up Casserole

Y’all want to talk about an easy casserole to throw together.  Bubble up casseroles are just that and they are all the hit right now.  This is my Mexican Bubble Up Casserole that I did with chicken, but you could just as easily do it with ground beef or ground sausage.  Mix it up and season as your family may like.  I know this is going to become one of your family favorites.

 

 

  • 2-3 cups cooked-shredded chicken I often use rotisserie
  • 1-1/2 cup salsa 
  • 1 can crushed tomatoes
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 2 -3 cups shredded cheese of your choice
  • 1 small can refrigerator biscuits 10 count- cut each into several pieces
  • 3/4 cup water
  1. Place the shredded chicken in a prepared 9×13 baking dish.
  2. In a large bowl combine remaining ingredients except for the cheese and biscuits
  3. Pour mixture over the chicken.
  4. Quarter the canned biscuits an spread evenly over top of mixture. (homemade biscuits below)
  5. Sprinkle cheese (2 cups if you are using canned biscuits) over the top.

Biscuits:

  • 1 cup self rising flour
  • 1/2-3/4 cup buttermilk
  • 1/4 cup shortening
  • 1 cup cheese
  • 1 can green chili peppers
  • 1/2 teaspoon garlic powder
  1. Cut the shortening into the flour in a medium bowl.
  2. add in remaining ingredients and about half the buttermilk
  3. Mix to combine and add more buttermilk as need for a thick dough
  4. Roll biscuits out on a floured surface and cut to size you like
