Turketti

What do you do with all that leftover Turkey from Thanksgiving?  Well when mom is visiting you get Turketti.  I must admit that it is a nice change from the last two days of Thanksgiving leftovers.  Not that I don’t love my turkey day leftovers, but a change is always good.  Well this was not only good, it was actually quite tasty.

So if you have some leftover turkey in the fridge, grab it and give this recipe a try.

Ingredients

  • 8 ounces dry spaghetti (I used whole wheat)
  • 1/2 cup onion, chopped
  • 1/4 cup chopped pimientos
  • 1/4 cup chopped green bell pepper
  • 2 cups leftover roast turkey, pulled into bite-sized pieces
  • 1 can condensed cream of golden mushroom soup
  • 1 cup chicken stock
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded Cheddar cheese

Directions

  1. Preheat an oven to 350 degrees F. Lightly grease a 9×13 inch baking dish.
  2. Break spaghetti into 1 1/2 t0 2-inch pieces.
  3. Combine onion, pimiento, and green pepper with  spaghetti, turkey and all other ingredients in a large bowl.  Mix together and spread the mixture in the baking dish.
  4. Top with the Cheddar cheese.
  5. Bake, uncovered, in oven for 45 minutes until the casserole is bubbling and cheese is all melted and lightly browned.

    Please correct recipe to how she made it, ie, 1 cup broth, soak spaghetti and that’s not a 9×9 inch pan. Is it a 9×13? Makes a big difference. I followed this recipe and it was a hot mess. Going to try it again. Thanks.
