Baked Pumpkin with Chorizo

Pumpkin pieces baked with chorizo sausage and cheese

Are you all looking for a nice side dish this time of the year that reflects the season?  Well this is an amazingly easy side dish with tremendous flavor.  Since I am in the middle of  “Pumpkin Everything”, I thought I’d work on a nice side dish.  Now you can use a regular pumpkin.  You know the big fat orange ones we all carved as children, but today I used a small kind of greyish colored pumpkin.  It looked like someone just smashed it down from a regular pumpkin.  You can find all sorts and shapes (and colors for that matter) this time of year.

You might want to cube up your pumpkin if it’s one of the larger shaped pumpkins, otherwise slicing it makes a great presentation.  Enjoy the fall and the soon to be holiday season y’all.

Ingredients:

  • 1 small pumpkin
  • 1/2 cup chorizo sausage cubed
  • 1/4 teaspoon ginger
  • 1 teaspoon soy sauce
  • 1/4 cup brown sugar
  • canola or vegetable oil to coat pumpkin (about 4 tablespoons)
  • 1/4 teaspoon cinnamon.
  • 2 teaspoons water
  • 4 tablespoons size of shredded mozzarella cheese

Slice and clean pumpkin.  Slice in about 2 inch slices.  Lay on a baking sheet and drizzle with oil.

In a small bowl combine the ginger, soy sauce, brown sugar, cinnamon and water.  Brush all the pumpkin slices to coat with mixture.  Sprinkle the chorizo over and around the pumpkin slices.  Make sure you get a bit of the sauce on the chorizo.

Bake for 30 minutes, turn pumpkin slices, and brush with sauce again, and bake for another 30 to 35 minutes.

Serve along side a nice baked chicken or even pork chops.  I think y’all are gonna like this one.
