Italian Pork Chops

I learned this very simple recipe from my aunt Holly.  She made these wonderful chops when she was staying with us and they have become a favorite.  I was amazed at the actual ease of this recipe.  I couldn’t believe it when she told me how she made them.   Simply sautéed in Italian Dressing.  Yup, that’s it.  A bottle of Italian Dressing.  The best thing is you can make them in a sauté pan, a slow cooker or electric skillet.  I have done all three.

So here is Aunt Holly’s “secret recipe pork chops”.

 

Ingredients:

  • 4-6 pork chops
  • 2-4 teaspoons olive oil
  • salt and pepper to taste
  • 1 bottle Italian salad dressing

First salt and pepper the chops and then brown on both sides in the olive oil over medium heat.  If continuing in sauté pan, pour enough Italian dressing over chops to just cover. Cover skillet and simmer on low for 45-60 minutes.  Uncover and allow the liquid to thicken.

If using the slow cooker add entire bottle. (cook 4-6 hours on high).  Uncover last hour to allow sauce to thicken.

If using electric skillet, make sure to continuously turn chops ever so often so they do not burn.  The electric skillet has hot spots from the heating elements and will burn the chops in some areas.  Allow to simmer for 1 hour with lid off last 15-20 minutes to thicken the sauce.
