Bacon & Radicchio Frittata

Sometimes it is so easy just to throw together a frittata with items you have in your refrigerator or pantry. The nice thing about frittatas is that they are good for breakfast lunch or dinner. This Bacon & Radicchio Frittata is my way of using fresh garden greens (unfortunately my garden isn’t ready and the radicchio is store bought this time) along with my favorite breakfast friend…..Bacon. LOL Let me know what you think about my version of a Bacon & Radicchio Frittata and y’all enjoy.


Ingredients:

  • 6 eggs
  • 8 strips bacon cooked
  • 2 small radicchio’s chopped
  • 1 small or 1/2 medium sweet onion diced
  • 1 red onion (or your choice of colors) diced
  • 2 cups shredded hash browns
  • 1 teaspoon salt and pepper
  • 1 teaspoon oregano
  • 1 teaspoon crushed sage
  • 1 teaspoon crushed thyme
  • 1 teaspoon garlic powder
  • 1/2 cup half and half
  • 2 heaping tablespoons sour cream
  • 2 cups cheddar cheese

 

  1. Preheat oven to 400°F
  2. Fry the bacon and chop in small pieces
  3. While the bacon is cooking, chop the radicchio and onions.
  4. Remove cooked bacon from skillet and reserve the bacon grease.
  5. Add the hash browns to the skilled and lightly brown
  6. Add radicchio, onions and peppers to the hash browns, season with salt and pepper and cook 2-3 minutes.
  7. While that is cooking, mix the eggs, half and half, sour cream, oregano, sage, thyme and garlic powder and mix well adding about 1/2 teaspoon salt and pepper to mixture.
  8. Turn off the heat under skillet and sprinkle the bacon and about 3/4 of the cheese around on top of the hash browns mixture.
  9. Evenly pour the egg mixture slowly over the entire skillet of hash browns.
  10. Sprinkle remaining cheese around the top of the egg mixture.
  11. Put in oven and bake for 20 minutes, check at 15 for doneness, everyone’s ovens cook differently.
  12. Let sit for 5-10 minutes before cutting.
  13. Top with sour cream and chives.
