Nilla Wafer Cake

 

This is a vintage recipe that I thought I’d share with y’all.  It is so easy to make and you are going to love the taste and texture.  It is a Nilla Wafer Cake that is made with an entire box of Nilla Wafer cookies.  Did your mom or grandma make this?  It’s one I am sure grandma Jean would have made.  So grab you a box of Nilla wafers and lets get to baking.

 

Ingredients:

  • 1 entire box Nilla wafers – crushed
  • 1 cup butter at room temperature
  • 2 cups sugar
  • 1 teaspoon vanilla
  • 6 eggs
  • 1/2 cup milk
  • 1 cup crushed pecans
  • 7 ounce bag of coconut
  • 1 pinch of salt

 

  1. Cream together the butter, vanilla and sugar.
  2. Add eggs one at a time till the yellow disappears.
  3. Alternately add the milk and cookie crumbs.  Begin with milk/end with cookie crumbs.
  4. Add in the salt, coconut and pecans and stir to combine.
  5. Pour into a prepared 9×13 baking dish.
  6. Bake in a preheated 300°F oven for 55-60 minutes.
