Southern Peanut Pie

 

I know y’all have had your share of Pecan Pies, but have you ever tried a peanut pie?  It is another slight variation on a southern chess pie.   It is so rich and creamy.  It of course compare to a pecan pie which is the hands down southern champion of pies (in my opinion).  But let me tell you that it will become a favorite of yours in no time.  So here is my version of a Peanut Pie.

 

  • 1 unbaked pie crust
  • 3 eggs
  • 1 cup sugar
  • 1 tablespoon flour
  • 1/2 teaspoon salt
  • 1 cup dark corn syrup
  • 2 tablespoons molasses
  • 1/4 cup butter (melted)
  • 1/4 teaspoon salt
  • 1 1/2 cups coarsely chopped unsalted dry-roasted peanuts –  Honey roasted are great to use as well.

 

  1. Preheat the oven to 375 degrees F.
  2. In a medium bowl, beat the eggs well.
  3. In a separate bowl, combine the sugar, flour, and salt. Stir with a fork to mix them together well.
  4. Now add the eggs to this mixture and stir to combine.
  5. To the eggs you now add the corn syrup, molasses, and melted butter and stir with a fork and mix them together evenly.
  6. Now add the sugar mixture and stir to dissolve the sugar and combine everything together evenly and well.
  7. Stir in the chopped peanuts and mix well.
  8. Pour the filling into the piecrust. Peanuts will rise to the top
  9. Place in the 375° degree oven and bake for 10 minutes.
  10. Reduce the heat to 350° and bake until the filling is puffed up all over and filling is nicely browned, 40 to 50 minutes.
  11. Place on a cooling rack  and cool to room temperature before cutting.
