Breakfast Pizza

I kind of missed breakfast this morning before heading to Starbucks to meet friends for coffee.  So when I got home I decided to make a small brunch item for us.  Now I don’t have to cook again until dinner tonight.

I had some left over pizza dough from home made mini pizza’s last night so I am using it up this morning to make my Breakfast Pizza’s.  (You could also use some of those flat breads they sell at the super market.)  I amazed myself at how wonderful these tasted with the fresh green pepper, green onions and cherry tomatoes that I picked up yesterday at the farmers market.  All I had to do was brown up some of my home made sausage and crisp up a couple strips of bacon and I was on a roll.  The best thing about these breakfast pizza’s is you can change them up to whatever flavors you like or fresh veggies you have available.

Ingredients:

  • home made Pizza dough (you can use the store bought in a can if you need to)
  • 1/2 cup pizza sauce or Marinara sauce
  • small green pepper – sliced thin
  • 1-2 green onions, tops and bottoms – sliced thin
  • 3-4 cherry tomatoes – sliced
  • 3 strips bacon – cooked and crumbled
  • 6-8 ounces country sausage – cooked (If you dont’ make your own….try to find Purnell’s “Old Folks” Sausage  )
  • 1/2 cup shredded mozzarella cheese
  • 2 eggs per pizza

Directions:

Now y’all remember that these little breakfast pizza’s are something you can change up and make your own.  Add more sauce or cheese.  Change out the sausage for all bacon.  Add some avocado or jalapeño peppers.  There are so many combinations you could try.  So change it up and make it your own.

1. Brown the sausage.

2. Roll our the pizza dough making sure that each side is floured well so it slides easily onto the pizza stone. ( you can get 2 or 3 Breakfast Pizza’s from a normal amount of pizza dough, you can see my 2 other piece’s there in the background)  That jar is my mom’s home made pizza sauce.  It is to die for.  Will get the recipe and post it for y’all soon.

3. Spread pizza sauce over dough and add the sausage, peppers, onions (bottoms), cherry tomatoes and cheese.

4. Add the eggs and crumbled bacon.

5. Bacon in a preheated 475 degree oven for 10-15 minutes until hot and bubbly and eggs are set and dough is browned nicely.

6. Remove from oven and sprinkle with green onion tops.  Enjoy
