Roasted Smashed Red Potatoes

I have to admit, I am a meat and potato type person.  Of course I have to have some sort of veggie on the side too, but I can go the meat and potatoes alone at times.

Now this is one  of the tastiest, yet easy potato dishes you’ll ever make.  Plus you can season them up and make them your own with a number of spices and herbs.  I’m sure that a nice spicy relish would go great on them as well, but today I did them up all alone without any additions.  They went great with the roasted chicken.  I think y’all will find them as tasty as they are easy to make.

Ingredients

  • Small red  potatoes
  • 1 teaspoon olive oil
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • Garlic Powder
  1. Boil potatoes in a saucepan until tender when pierced with a fork.
  2. Drain in colander and transfer potatoes to a cookie sheet.
  3. Using a potato masher (or your hand, which I did), smash each potato down.
  4. Brush each potato with olive oil. Sprinkle generously with salt (you really can’t over salt these beauties). Add pepper and garlic powder, to taste.
  5. Put on the top rack of the oven near the broiler and broil until they turn golden brown on the edges (about 5 minutes). Keep an eye on them so they do not burn.
  6. Remove from oven and serve.
