Ingredients:

  • 2 lbs boneless skinless chicken thighs or breast
  • 1 head of cauliflower broken/cut into pieces
  • 1 onion cut in large chunks
  • 1/2 bag of baby carrots
  • 10.75 oz cream of chicken soup (low sodium preferred)
  • 1 envelope dry ranch dressing/seasoning mix 
  • 2 teaspoons flour
  • 1 cup chicken stock
  • 2 cloves garlic minced
  • 1 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

  • Place cut cauliflower in bottom of slow cooker.
  • Top with the chopped onion and baby carrots
  • Sprinkle flour over the veggies.
  • Dollop the creamed soup over the top of the vegetables along with the garlic.
  • Sprinkle ranch mix over the top, all the seasonings, and add the chicken stock.
  • Salt and pepper the chicken and add the chicken to the slow cooker, cover and cook on low 6-8 hours, high 3-5 hours.
  • About 1/2 hour before the minimum cook time, gently stir the chicken and veggies to mix all in juices.
  • Cover and continue cooking for about 30 minutes.
