Tuscan Salmon

I love salmon any time of the year.  So when I found some fresh salmon at the market today, I decided I needed to grab it.  Instead of my usual sautéed with a salsa over the top (link below), I thought I’d try a creamy Tuscan Salmon instead.  I was very pleasantly surprised at how good this was with the spinach and cream sauce.  It is so easy to do as you can see in the video so give it a try and let me know what you think

 

3-4 pieces salmon
2 teaspoons olive oil
2 tablespoons butter
1 small onion diced
5 ounces sun dried tomatoes
4-5 cloves minced garlic
1 tablespoon flour
1/2 cup white wine (or chicken or veggie stock)
1 1/2 cups heavy cream
9 ounce bag baby spinach
1/2 cup grated parmesan cheese
Salt and pepper to taste

Sauté your salmon on both sides in the olive oil over medium heat till almost done.
Remove from pan and add in butter and melt.
Add in diced onions and tomatoes, stir and let cook over medium heat till onions are translucent.
Add in the garlic and stir to incorporate.
Sprinkle flour over mixture and stir. Let cook 2-3 minutes to cook out the flour taste.
Add in the wine and stir to combine, now pour in the heavy cream.
Put the spinach over mixture and cover to wilt.
After 3-4 minutes the spinach will be wilted and you can nestle the salmon back into the spinach sauce mixture.
Sprinkle the cheese over the top
Cover and let simmer on low for 3-4 minutes
Taste for seasoning and adjust if needed.
