Sweet Potato Biscuits

If you want something a bit special on your Thanksgiving table this year try switching out your biscuits or rolls for these Sweet Potato Biscuits. They have a great taste and are so easy to make. Try them with a bit of honey butter or pumpkin butter…they are amazing . Let me know what you think about this version and y’all enjoy.

Ingredients:
3 cups self rising flour
2 tablespoons sugar
1 stick salted butter cubed and chilled
1 1/2 cups mashed sweet potatoes (cold, not hot)
3/4 cup cold buttermilk
1 tablespoon melted butter

In a large bowl, whisk together self-rising flour and sugar.
Use a pastry blender or two forks to cut in the cold butter until the mixture is crumbly and some pea-size pieces of butter remain. (or your hands like I do)
Whisk together mashed sweet potatoes and buttermilk.
Stir the potato mixture into the flour/butter mixture just until the dry ingredients are moistened.
If your dough is too dry, add a little bit more buttermilk and if it is too sticky just add a bit more flour.
Turn out the dough onto a lightly floured surface and knead 4-6 times as you would buttermilk biscuits and press to about 1 inch thickness
Cut biscuits out with your regular biscuit cutter or a glass.
Place in a prepared cast iron skillet or baking dish/pan
Bake biscuits in a 450°F oven until golden brown and cooked through, about 15-20 minutes.
Brush warm biscuits with melted butter all over the top.
