Banana Split Pudding

This is Michaels recipe for “Banana Split Pudding”.  He is quite meticulous about the way he layers each layer and lays out each item.  I will admit that this is one of the first desserts to go at our holiday table.  This year I decided to make it the first item on my 25 days of Christmas.  Why? Well mainly because I was actually eating a bowl of it when I started outlining the days and items I would highlight.

I think you all will enjoy this dessert and maybe it will become one of your family’s favorites as well.

Ingredients:

  • 5 bananas
  • 2 cans crushed pineapple
  • 4 small boxes of instant vanilla pudding
  • 1 jar maraschino cherries
  • 1 tub whipped cream
  • 1 box graham cracker crumbs
  • 2 sticks butter
  • 7 cups whole milk
  • 1 tablespoon corn starch.
  • 3/4 bag of walnuts

And he’s off…..( I took pictures of his whole process, not necessarily for the recipe, but for insurance purposes. I rarely allow him in my kitchen due to the fact that he can barely boil water)

First he mixes his boxes of pudding, corn starch and milk, then places in refrigerator to set.

Then he mixes his butter (melted) with his graham cracker crumbs.  He did this right in the pan he was going to make it in.

Then he flattened it out all nice and pretty.

Next he cut his bananas and cherries.  (Y’all, I have never seen anyone peel a banana like him, I literally had to stop and figure out what he was doing.  As my grandma Cortie would say, it looked like he was taking fits.  He would hold the banana as usual to peel, but then would literally jump up and snap it open like it was a branch on a tree….sometimes taking a couple times to get it open.  You have to understand Michael and just over look these little tendencies he has.)

Next he asked me where I kept the hammer.  (see this goes back to the whole pictures for insurance purposes thingy) It seems that he thought he was going to use a hammer on my counter tops to crush his walnuts.  I then introduced him to my mini food processor.  He was amazed they had a machine to do this, and loved watching it spin.  Little things amaze him.

By now his pudding was set up, and it was time for him to layer his masterpiece.  He started with a layer of pudding, followed by arranging the bananas.IMG_3184IMG_3186IMG_3192

Next came the pine apple that he had completely drained the juice from. (I used it with a little rum later to get me through the clean up in my kitchen he made)

Then he did one more layer of the above and then topped it with his whipped cream, ( I let him buy the tub kind, I was hardly going to let him use my Kitchen Aid mixer again to make whipped cream and have to explain how it happened) the maraschino cherries and crushed walnuts.

So there you have it,  Michaels Banana Split Pudding.  I was a nervous wreck watching him in my kitchen, but the end product was quite good.  I think y’all will enjoy it too.
