This is my version of a sloppy joe casserole. Let me know what you think about this version and y’all enjoy.
1 lb. ground beef
1 small onion
1 green pepper
1 red or orange pepper
1 garlic clove minced
1 can Rotel®
1 cup ketchup
1 tablespoon brown sugar
1 teaspoon yellow mustard
salt/pepper to taste
2 cups frozen corn
2 tablespoons molasses
2 tablespoons parsley flakes
1 16 ounce box penne pasta cooked al dente
1 1/2 cup shredded colby jack cheese
Brown the ground beef along with the onion and peppers.
One browned and the onions/peppers softened, add in the garlic and cook 2 minutes.
Add in the remaining ingredients minus the pasta and cheese. Mix to combine and cook an additional 10 minutes.
Mix in half of the cheese and stir to combine.
Pour into a prepared 9×13 baking dish. Top with remaining cheese
Place in a 350°F oven and bake for 20 minutes.
Serve after cooling a few minutes.
