Cowboy Pasta Salad

My Cowboy Pasta Salad is not only so easy to throw together, but it is a great cold salad to eat on those hot summer days. Makes a great picnic salad too. Let me know what you think about this version and y’all enjoy.

 

Ingredients:
1 pound of mini farfalle cooked and cooled (or macaroni noodles)
1 pound lean ground beef fried, drained and cooled
1 4 ounce can green chilis
1 teaspoon each of Chili powder, salt and onion powder
1/2 diced purple onion
1 diced green pepper
1 can corn
1 can black beans
1 pint cherry tomatoes halved
1 cup cubed cheddar cheese
2 tablespoons cilantro (optional)
1/2 pound cooked and crumbled bacon

Dressing
1/3 cup ketchup
1/3 cup mayo
1/3 cup sour cream
1/4 cup salsa
1 1/2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon yellow mustard
1 tablespoon apple cider vinegar
1/4 teaspoon paprika
1/4 teaspoon salt
1/4 garlic powder
1/4 teaspoon chili powder

Place all dressing ingredients in a small bowl and mix well.
In a large bowl mix the salad ingredients and toss to combine.
Pour over the dressing and mix well.
Refrigerate 2 hours before serving
