Aunt Carols Zucchini Bread

This was my Aunt Carols recipe for Zucchini Bread. I am telling you that that beautiful lady could make anything. With always having an abundance of zucchini, she found so many great ways of using them up. This bread is so moist and delicious. I think it will find a place in your recipe box. Ingredients:

1 cup chopped walnuts
4 eggs
2 cups sugar
1 cup oil
2 cups grated zucchini
1 teaspoon cinnamon
1 teaspoon vanilla
3 1/2 cups flour
1 1/2 teaspoons baking soda
1 1/2 teaspoon salt
3/4 teaspoon baking powder

In mixing bowl put your sugar and eggs and blend together well.
Slowly add in the flour in small amounts till all incorporated.
Add in zucchini till mixed together well. Then add the oil and mix 1-2 minutes.
Add in the baking soda, salt and baking powder along with the vanilla
Once mixed together you will add your chopped walnuts.
Pour into 2 prepared loaf pans.
Bake at 350°F for 50-60 minutes
