Pumpkin Pecan Fudge

It’s finally the fall season and I am starting to make more pumpkin flavored treats.  I can’t get enough of the holiday season and all the goodies it brings.  Y’all give this fudge recipe a try and watch the video below for step by step directions.  Happy Fall Y’all.

 

 

Ingredients:

  • 1 1/2 sticks butter
  • 1 1/2 cup brown sugar
  • 1 1/2 cup white sugar
  • 2/3 cup half/half
  • 2/3 cup pumpkin puree (not pumpkin pie mix)
  • 1 T. Pumpkin spice mix
  • 1/2 t. salt
  • 1 1/2 t. vanilla
  • 1 bag white chocolate chips
  • 7 oz. jar of marshmallow fluff
  • 1 cup crushed pecans
  1. In a heavy bottomed pan mix together the butter, sugars, half and half, pumpkin puree, spice mix and salt.  Bring to boil
  2. Stirring constantly over medium high heat until you reach 235°F on a candy thermometer
  3. Remove from heat and mix in the chips, marshmallow fluff and vanilla.  Stir quickly and well to incorporate
  4. Fold in the pecans
  5. Pour into prepared 9×13 baking pan (I line mine with parchment paper)
  6. Cool for 2-3 hours on counter or an hour or so in the refrigerator to set up.
  7. Cut in squares and serve at room temperature.
  8. Keeps well for a few weeks in the refrigerator.
