Baked Salmon

Y’all, Salmon has to be one of my favorite fish.  Literally, just a little olive oil brushed on both sides, and then sprinkled with your favorite herbs and spices.  Then baked till it is flaky.

I like salmon because it is such a renewable food.  In fact, more than 85% of Atlantic Salmon is farmed.  Not always on land in fisheries, but also in large coral like facilities in the open sea.

My favorite way to make salmon is either on the grill or baked with the instructions below.

  • 2 salmon filets (approx. 1/2 lb each)
  • olive oil
  • 1 Lemon
  • salt and pepper to taste

A quick and easy dish that requires very little effort. It works best with fresh salmon purchased the same day you plan to eat it.

Put salmon filets in a glass baking dish. Drizzle a little olive oil over the filets and flip them over a couple of times to spread the oil and get a little oil on the bottom of the baking dish and the under side of the filets, and sprinkle with salt and pepper.

Bake in a 350 degree oven for 15-30 minutes depending on the thickness of the filets. You want them to be cooked until they start to flake and become opaque inside, but don’t dry them out. Once you remove from oven, squeeze some lemon juice over them and enjoy.
