Mom got this recipe out of an old Amish cookbook that was designed to feed a crowd. She made the double batch but I have put the ingredients down below for a single casserole. This is one tasty and easy to throw together casserole that will fill up your family. Let me know what you think about this version and y’all enjoy.
- 1 1/2 lbs. ground beef
- 1 diced medium onion
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 box elbow macaroni – cooked
- 4 cups diced potatoes
- 1 can of sweet peas (or pint if home canned)
- 1 can cream of mushroom soup
- 1/2 cup tomato sauce
- 1/2 lb. Velveeta® Cheese sliced or shredded
- Brown ground beef and drain excess fat.
- In a large bowl combine all remaining ingredients.
- Add in the ground beef and mix to combine
- Pour into a 9×13 baking dish and cook covered for 30 minute’s at 350°F
